In a neighborhood where restaurants come and go, Silantro Fil-Mex Cantina in Kapitolyo, Pasig is one of the few that has stayed. Since 2013, it’s built a steady following around big servings and bold flavors, grounded in a Fil-Mex approach that leans into what works for the Filipino palate.
From Herb to Table
Silantro didn’t begin in Kapitolyo. Rather, it started in Dagupan, where the idea of Filipino-Mexican fusion first took shape. The name itself plays on “cilantro,” a staple herb in Mexican cuisine, but the concept is clearly localized.
The menu leans into adapting Mexican dishes for Filipino tastes: stronger seasoning, richer sauces, and a noticeable love for cheese. Over time, that formula found its way to Kapitolyo and other parts of the country.
Stepping Inside
The space is casual and a little worn-in, but in a way that feels familiar rather than dated. Wooden tables and benches give it a slightly rustic look, while the al fresco seats make it easy for bigger groups to settle in. When you’re inside, you’ll spot posters that pay homage to Mexican wrestling, which add character without feeling overdone.

It’s usually busy, especially during peak hours (we came in during lunchtime), with a mix of families, colleagues, and barkadas. Naturally, the vibe leans lively and a bit loud, with tables filling up quickly and meals that tend to stretch longer than expected.
Where Flavors Unite
Silantro takes “Fil-Mex that’s filling” very seriously.

Portions are generous, as it’s meant for sharing, which helps justify the mid-range pricing.
The Beef and Lengua Burrito, in particular, stands out for its heft and packed-in-the-hand feel, while the Paella Fajita comes in sizzling and seafood-heavy without tasting fishy. Meanwhile, the Grilled Pork Ribs bring a more ulam-style comfort, smoky and tender in parts. To round things off, the Mango Shake cuts through the richness with something cool for the summer.
In a way, Silantro doesn’t aim for subtlety. It’s built on big servings, bold flavors, and a Fil-Mex identity that prioritizes comfort over complexity.
Especially in Kapitolyo’s evolving food scene, it’s one of the places that has continued to draw people in.
